The brick-and-mortar location at Diesel Commons in Santa Ana was initially meant to open in 2021, but these things never happen on schedule, and this one took even longer. The bakery finally opened in November, with limited hours, which have expanded gradually since. Almost everything sells out by noon or shortly thereafter most days.
The breads are perfect, particularly the classic sourdough but also a version infused with blue-corn masa. And the pastries are truly exquisite. Just look at that cruffin stuffed w/ ube cream. And I’m still waiting for Evaristo to relaunch his kouign-amann, which I fell in love with during the pandemic. 728 N. Poinsettia St., Santa Ana, California, 61hundredbread.com
