Dish of the Week: Jamón Ibérico at Ernesto’s, New York

Here are two of my favorite things on one plate: Ibêrico ham and freshly made potato chips. And it is absolutely incredible. If I lived on the Lower East Side of Manhattan, I would be eating this for dinner at least once a week, I swear. I wouldn’t be able to help myself. The chips are impossibly thin and still warm from the fryer. The jamón is expertly shaved and tangled into those chips. Absolutely Brilliant. Nirvana. (And the truest measure of any Spanish restaurant, the pan con tomate. is also fantastic.)
