Dish of the Week: Cacio e Pepe at Oliver’s Osteria, Laguna Beach

Rome’s famous cacio e pepe is all the rage these days in California, and I haven’t found anyone doing it better than Oliver’s Osteria in Laguna Beach. The rigatoni are toothsome and chewy and slicked with a glaze of melted Pecorino and Parmesan and dusted with freshly ground pepper. It is the most stunning plate of pasta I’ve eaten in a long while. We’re all on lockdown at the moment, but we still have to eat.  In lieu of a review this week in the Orange County Register, I’ve written about some good takeout and delivery options: 10 great dishes still available during the coronavirus pandemic. If you venture out for takeout, make sure to order enough food for several meals. The fewer excursions the better. Stay safe. Wear gloves and a mask. Keep your distance. And flatten the curve.
