Rome’s famous cacio e pepe is all the rage these days in California, and I haven’t found anyone doing it better than Oliver’s Osteria in Laguna Beach. The rigatoni are toothsome and chewy and slicked with a glaze of melted Pecorino and Parmesan and dusted with freshly ground pepper. It is the most stunning plate of pasta I’ve eaten in a long while. It’s absolutely perfect. And it’s available for takeout during the pandemic. 853 Laguna Canyon Road, Laguna Beach, 949-715-0261, oliversosteria.com
We’re all on lockdown at the moment, but we still have to eat.
