Rome’s famous cacio e pepe is all the rage these days in California, and I haven’t found anyone doing it better than Oliver’s Osteria in Laguna Beach. The rigatoni are toothsome and chewy and slicked with a glaze of melted Pecorino and Parmesan and dusted with freshly ground pepper. It is the most stunning plate of pasta I’ve eaten in a long while. We’re all on lockdown at the moment, but we still have to eat.
