El Tizoncito has been making tacos al pastor in Mexico City since 1966, and while they now operate several locations, little has changed since the beginning. The trompo (vertical rotisserie) is still fueled by lava-hot charcoal, not gas. The pork is beautifully marinated and succulent. The tortillas, intoxicatingly fragrant. Plain and simple: These are really good, uncomplicated, classic al pastor tacos.
